Preparing : Cut onions
crosswise thinly and sprinkle with some salt.
Using hands squeeze onions until they are wilted
then wash and drain. Place onions in the salad
bowl and chop tomatoes, peppers and the cucumber.
Add chopped parsley. Place oil, salt and vinegar
in a small bowl and whisk with a fork and spread
over the salad evenly and toss. Garnish with ripe
olives.
