Preparing : 1- Slice
onions and add to large pan of water. Place leg
of lamb carefully into water.
2- Allow to boil, add salt and simmer until meat
is semi-cooked.
3- Place chopped tomatoes, paste and oil in pan
and lightly cook.
4- Place leg of lamb on baking dish and spread
tomato mixture over lamb.
5- Arrange blanched potatoes, peas, carrots,onions
and sliced green peppers around lamb.
6- Cook in moderate oven until meat is browned.
Remove from oven adn allow to stand for 10 minutes.
Sprinkle chopped parsley on top before serving.
