Preparing : Heat margarine
in a large pan, add finely chopped onions, cook
stirring, until onions are browned, add shanks
and paste, cook stirring 15 minutes. Add water,
cayenne, salt , simmer, covered, about 1 hour.
In another pan heat sunflower oil, cut eggplants,
each in 4 stripes and fry. Fold stripes on meats,
put each of them on a slice tomato and a green
pepper and hold them with tootpicks. Put meats
on tray, add stock, bake in 180 C oven, 20 minutes,
serve hot
